Many people in the U.S. are recovering from the snowy blast and blizzard conditions these past few days. Stay warm and safe inside your home, if you can, and add a cup of hot chocolate, and a good book to your afternoon and evening.
I’ve searched for a good hot chocolate recipe, keeping in mind that the perfect hot chocolate needs bittersweet chocolate and unsweetened cocoa. Remember that milk is sweet on its own, so you don’t need more sugar. Also, strive for a balance between sweet and bitter.
The following recipe has been adapted from Bon Appetit:
4 cups milk (preferably whole)
1/4 cup unsweetened cocoa powder
1/4 cup sugar
4 ounces bittersweet chocolate, chopped
pinch of salt
marshmallows and whipped cream
Directions: Combine milk, cocoa and sugar in heavy saucepan. Over medium heat, whisk frequently, then add chocolate until melted. Add salt and simmer. Whisk until frothy. Serve hot and enjoy!

Beth, I assumed you may have been clobbered by snow. Several schools in the Charlotte, NC, area are still closed today.
