Most everyone loves corned beef and cabbage, especially since St. Patrick’s Day is nearing. Here’s an easy and quick recipe—ready in 2 1/2 hours.
3 lb. corned beef with spice packet
2 packages of peeled baby carrots
1 white onion
5-10 white or red potatoes
1 head cabbage
Place corned beef in a large pot and cover with water. Add the spice packet that comes with the corned beef. Cover and bring to boil, then reduce to a simmer.
Add potatoes, onion, and carrots, and boil until the vegetables are tender. Add cabbage and boil for an additional 15 minutes.
Serve with Irish soda bread and enjoy!
