Resurrection Rolls

Thanks to Southern Savers for this gluten-free recipe. As we near Easter, this recipe tells a story of the resurrection—perfect to share with children. Hope you enjoy! The story: 1. The marshmallow represents Jesus. 2. The melted butter that the marshmallow is dipped in represents the oils of embalming. 3. The cinnamon and sugar represent the spices that Jesus was buried with. 4. The dough wrapped around the marshmallow represents the strips of linen Jesus was buried in. 5. The oven represents the tomb and the oven door is the stone. 6. The marshmallow melts. When the roll is cut open, the marshmallow has disappeared. Jesus is risen!

The Ingredients: • 2 tablespoons active dry yeast • 2 cups warm water • 1/4 cup sugar • 1/3 cup oil • 1 egg • 1 teaspoon salt • 3 1/3 cups all-purpose gluten free flour mix • 2 tablespoons xanthan gum • 1/4 cup melted butter • 1/2 cup sugar • 1 tbsp ground cinnamon • 1 bag large marshmallows

The Directions: 1. Dissolve yeast and warm water together in the stand mixer bowl. Add sugar and let sit for 5 minutes. 2. Add the next 5 ingredients and mix the dough on medium low with your dough hook for 5 minutes. Scrape bowl sides as needed. 3. Transfer the dough to a large, greased mixing bowl and cover with a damp towel. Let rise for 1 1/2 hours. 4. Preheat the oven to 400 degrees. 5. Turn dough out onto lightly floured surface. Using a rolling pin, roll the dough out into a rectangle at 1/4″ inch thickness. Add flour as needed if dough sticks. 6. Cut dough into triangles resembling crescent roll dough. 7. Combine the sugar and cinnamon in a small bowl. Dip a marshmallow into the melted butter. Coat with cinnamon/sugar mixture. Place the marshmallow onto the large side of one of the dough triangles and roll up. Pinch and squeeze the dough around the marshmallow to seal it. 8. Bake in the preheated oven for 12-14 minutes or until the tops of the rolls are golden. Cool before serving.
