Limoncello
I know I’ve been away, seems like forever…and I won’t bore you with the gory details, but yes, I’ve been dodging lemons like crazy.
To celebrate my return to the Pink Fuzzy Slippers Authors, I decided to post the recipe for a delightful adult beverage, perfect for the summer.
Ingredients:
- 16 Lemons
- 2 Liters Vodka or grain alcohol
- 2 pounds of sugar
- 12 cups water
- 2 containers with airtight lids. (I prefer glass to plastic)
Directions:
- Peel your lemons with a vegetable peeler, avoiding the pith (with part). Add peels to one of the large containers. Pour 2 liters of alcohol, close tight and set aside for 2-3 weeks.
- When you’re ready to make and add simple syrup, drain the alcohol through a fine sieve or cheesecloth, reserving the liquid and discarding the zest. Divide the mixture, 1/2 in one container and 1/2 in the other.
- In a large post, combine water and sugar. Stir over medium heat until mixture comes to a low boil and sugar dissolves. Continue simmering until mixture has reduced by 1/4.
- Remove from heat and allow to cool to room temperature. Don’t rush it, adding the mixture if it’s too home will burn off the alcohol, rendering the Limoncello useless.
- Add sugar water equally to the two containers. Put the lid on tight and store for an additional 1-2 weeks.
- NOTE: I like mine with just a hint of mint in it.
